Chef Dustin Valette, a Sonoma County native, brings French-inspired California cuisine shaped by his training in leading kitchens such as Aqua, Bouchon, and Gary Danko. After returning home, he opened Valette and The Matheson, both rooted in local ingredients, community partnerships, and winemaker collaborations. He also produces Valette Wines alongside some of Sonoma’s most respected vintners.

Jesse Katz is the winemaker behind Aperture Cellars and Devil Proof Vineyards, known for his precision-driven style and multiple 100-point wines. A graduate of Fresno State, he trained at Pétrus, Screaming Eagle, and top wineries across Napa, Bordeaux, and Argentina before becoming the youngest head winemaker in the U.S. His wines have set world records at auction, and he remains deeply involved in charitable fundraising through his work.
